The most healthy and nutritional food a person can eat are fruits and vegetables. A person needs to incorporate a considerable amount of fruits and vegetables to ensure an energetic and healthy living. There are several vital organs along with cells and tissues inside the human body that need proper fuel to work efficiently. Numerous vegetables and fruits are fuel for body that not only maintain health but prevent the chronic ailments to develop and cause discomfort to a person. Vegetables are major source of nutrients which people can make a part of their daily eating routine. There are significant number of vegetables available which a have a unique, pleasant taste and can be either eaten in raw form or be used in dishes and salads. Potatoes, tomatoes, cucumbers, carrots, turnips, peas, beet, cauliflower, cabbage, spinach, broccoli and lettuce few of the widely grown and consumed vegetables.

Beet:

Beets also known as golden beet, garden beet and red beet are part of that group of vegetables that are widely cultivated and used. The taproot portion of the beet is called ‘beetroot’. Beets are used as a food source and it also serve other purposes such as in food coloring and in medicines. Beet is one of the variety of Beta vulgaris whose taproot is called beetroot and leaves are called beet leaves.

History of Beets and its uses:

Beetroot cultivation dates back to ancient times in the Mediterranean region and then it made it way in Babylon culture by 9th century. Beetroot have also been a part of Chinese traditions. Beetroots are seasonal crops and used in meals, salads, soups, pickles and as a coloring substance. Beets have sucrose and also have been used to make refined sugar.

The nutritional elements in Beets:

Like every vegetables, beets have vast amounts of vitamins, carotenoids and minerals. These includes Vitamin C, copper, magnesium, fiber, phosphorus and glycine. Beets also have rich sugar content which is not found that much in other vegetables. Beetroot in raw form have high concentration of water and small amounts of carbohydrates, proteins and little amount of fat.

Beetroot benefits to human health:

The root and leaves of beets contain numerous nutrients which is used in protection against diseases such as heart problems, certain cancers, reduce birth defects and prevent respiratory illness. In ancient times beet was used to treat fever and constipation. The beet leaves were put on wounds to speed up the healing process. Some significant benefits of beetroot are

  • Beets contain special pigment known as betacyanins which prevents growth of cancerous cells and protect against skin, lung and especially colon cancer.
  • The beet juice improves the liver function
  • The dietary fiber present in beets lowers the cholesterol levels which reduces the cardiovascular diseases and chance of stroke.
  • The presence of Vitamin C is important in tackling issues in respiratory system, prevent asthma problems and improve immune system by removing free radicals.
  • For pregnant women eating beets would be beneficial as it helps the infant’s spinal cord to develop.
  • Beets have carotenoid named beta-carotene which prevents cataracts which is common in elderly people.

How beets can be consumed:

Beets can be used in variety of ways. Beetroots can be eaten in raw form or they are either boiled or even roasted. Beetroots are also used in preparation of different meals. The skin of beetroot needs to be removed when eating in raw form. Beetroots are added in salads and also used in making pickles. A person can first remove the beet skin, cut the beetroot in slices and season it pepper, lemon and salt and then enjoy the nutritional snack.
